Hi. I used cream cheese instead of the heavy cream. It's just like making mashed potatoes, except these are so silky and creamy. You can also pop them in a pan and broil parm cheese on top until golden brown.

 
Moosewood is a series of wonderful vegetarian cookbooks from, if memory serves me,

the early '70s. I had two that I left behind on a job a while back and have been meaning to go to Amazon and see if any are around.
Thanks for the reminder; not sure I've had that soup, but loved those books!
Another one I need to replace from that time is "Diet for a Small Planet". Some wonderful food.

 
Nan, there is an update version of the original light tan colored one....

It has brought some of the ingredients up to date and lightened up some receipes (from what I could tell from a brief glance at the book store). I am very tempted to order it but I just have soooo many cookbooks already............What's a cookbook lover to do?

in the bottom of your closets, Barb. That's where I found lotz of space for storing my cookbook addiction. ;o)

Denice, if you're too young to remember Moosewood in particular, and the seventies in general,

don't worry. Those of us who are old enough to remember the seventies in general have a little trouble remembering anything about them in particular.

Mollie Katzen's "The Moosewood Cookbook" and "The Enchanted Broccoli Forest" outlive all such cliches.

 
You are too funny! in 76 I was in 3rd grade, but my older

brothers had their share of lost brain cells!

 
That looks awesome! And it is seriously soup weather here!

Cauliflower is buy one get one free at my local grocery store now, so i will make this one on Monday. I'll let you know how it turns out!

Enjoy...I don't bother with the double-boiler step...just be careful to

stir well from the bottom since you'll be adding cheese.

And definitely do the buttermilk step at the end...it adds just the right tang.
