Chai Oatmeal

1 1/2 cups milk

1/4 teaspoon salt

1/4 teaspoon cinnamon

1/4 tsp fround coriander

1/4 teaspoon ground cardamom

1/4 teaspoon turmeric

(pinch of saffron—optional)

drop of vanilla extract (optional)

2 teaspoons light honey

3/4 cup rolled oats

2 tablespoons oat bran

minced pistachios (optional)

yogurt or buttermilk (optional)

Pour milk into a medium saucepan. Add salt, cinnamon, coriander, cardamom, turmeric, and saffron, if using, and whisk to blend. Place pan over medium heat.

Just before milk comes to a boil, lower heat amd let mixture simmer for about 5 minutes. Stir in vanilla and honey and whisk til honey dissolves.

Sprinkle in oats and oat bran, and stir once or twice. Cover pan and leave over low heat for about 8 minutes, stirring occasionally.

When oatmeal has thickened to your liking, serve hot with pistachios and buttermilk or yogurt.

I would never have thought of that! Sounds great. I do a chai creme caramel--people who say they

hate custardy things just devour it like sharks at the feed. I don't invite friends for breakfast (lucky for them!), but I'll be trying this very soon.

Oh, yum... I can't wait to try this! Thanks for posting it!
