I invented this cocktail for a party last month and it is quite delicious and was a hit.
Ingredients:
Champagne
Cognac
Sake
Peach Liqueur
Blue Curacao
Absinthe
Peach Bitters
Lime-Lemon Syrup
Make Syrup: Using a vegetable peeler, peel the green and yellow zest from 1 lime and 1 lemon. Mince, add to 1 cup water and 1 cup sugar. Bring to a simmer, remove from heat and immediately add the juice from the lime and lemon. Chill.
In a cocktail shaker full of crushed ice, add:
1 jigger each Cognac, Sake, Peach Liqueur, Blue Curacao, and Lime-Lemon Syrup. Add 1 tsp. Absinthe and 2 dashes of Peach Bitters.
Strain mix into frozen martini glasses, filling each serving glass half full of mixture. Top with ice cold dry champagne.
Beautiful and very summery looking (they should be Mediterranean aqua blue), especially if the glasses have a gold rim.
