These were just fabulous and made a big hit at breakfast this morning. I subbed half of the milk with buttermilk and added 1/4 tsp. baking soda. Since I had already measured my dry ingredients the night before, I wasn't able to decrease the baking powder... didn't make any difference though! I sprinkle each one with a little shredded cheddar before they went into the oven - I like the look.

my notes:

1. These would be fabulous with the additon of chilies - I'm thinking ortegas next time.

2. This makes a VERY - VERY stiff dough. Forget the spatula, you'll need a strong wooden spoon.

3. The muffin tin cups will be full and rounded with the batter.

4. These stick - I sprayed the pan with the first batch and used crisco with the second and they still stuck (with a non-stick muffin pan), but I carefully worked them out and didn't break any. Might want to consider using cupcake papers.

Beautiful! I am so impressed that you measure your dry ingredients the night before. I still

have dishes in my sink! : )

I learned to pre-measure dry things after doing so many Christmas baskets

I like up ziploc bags with the recipe name on each one then I can measure all of one thing at a time - like flour, baking powder, salt, etc.

Sometimes I do it way ahead of time and put it in the freezer - especially for scones.

 
Cornmeal will make them drier, so add extra milk and maybe a little extra butter. For example,

if you substitute half the flour with cornmeal, try using 1 cup milk instead of 3/4 cup, etc. Of course, this is all guess work - needs experimentation.

 
I like to do this when I want to take something to work in the morning.

Sometimes I just do it if I've been wanting to make something and don't want to or have time to tackle the whole thing at once.

 
That is a gret idea! Thanks for sharing - I never thought of pre-measuring

but I always do my lunch the night before I go to work so it makes a lot of sense when it comes to saving time in the morning.

 
And if you're a busy mom with kids, you can grab a bag of dry ingredients for a quick batch

of cookies... kids always seem to tell you at the last minute that they are supposed to take something to school smileys/smile.gif
