A long time friend of mine served these for dinner once, they are delicious. I've made them since several times. You can add more or less cheese, add romano, if you wish, or even chopped nuts along with the cheese.
Clean-up is extra easy in a well-seasoned cast iron pan.
Cheesy Brussels Sprouts
20 Brussels sprouts, washed & trimmed
garlic oil or olive oil + garlic
1/2 c + 2 TBSP grated Parmesan cheese
Slice brussels sprouts in half. Heat enough garlic oil to cover the bottom of a skillet. Fry brussels sprouts until golden on both sides. At this point sprinkle the 1/2 c parmesan cheese over and toss well. Remove w/slotted spoon to a serving bowl. Add the 2 tblsp of parmesan cheese and toss. Serve hot.
I've never "fried" them just based on avoiding fried anything. I usually thaw them on paper towels to get frozen frost off by letting them come to room temp, then simply stir them around in a little oil in bottom of iron skillet; then I sprinkle the Parm cheese over & serve when cheese is melted. In the iron skillet, it's a simple clean up job -- before even going to the table. One box is more than Geo & I eat at one sitting, so they serve well as left overs too
