Haven't tried this yet, but it looks good...

Chicken in Honeyed Tomatoes

6 boneless, skinless chicken breasts

Salt and pepper to taste

3 T. olive oil

1 small onion, chopped

1 clove garlic, minced

1 can diced tomatoes (14.5 oz.)

1/2 cup dry white wine

6 T. honey

1/2 t. dried tarragon leaves

1/2 t. dried thyme leaves

3/4 C. pitted black olives, halved

1 T. chopped parsley

Season chicken breasts with salt and pepper. Heat olive oil in large skillet. Cook chicken approximately 8 minutes per side. Remove chicken and keep warm. In the same skillet, saute onion and garlic until soft. Stir in tomatoes, wine, honey, thyme and tarragon. Simmer, uncovered, until sauce is thickened. Return chicken to sauce. Add olives. Cover and simmer another 5 minutes. Sprinkle with parsley and serve.
