RECIPE: REC: Chipotle Sausage Bake. I finally tweaked this to the way we like it & it's really good.

Chipotle Sausage Bake Preheat oven to 350ºF Serves 3

4 oz chipotle sausage, thinly, sliced

3 oz cream cheese, softened

1/4 cup cornmeal

1 ½ tbsp sugar

2 eggs

3/4 c. corn kernels, fresh or frozen

3/4 cup shredded cheddar cheese, or nacho mix

3 green onions, sliced

1/4 jalapeno pepper, seeded, and, minced

2 tbsp. chopped fresh cilantro

1/4 tsp salt

1/4 tsp pepper

In skillet, cook sausage over medium heat, stirring often, for about 5 minutes or until golden.

Meanwhile, in bowl, beat together cream cheese, cornmeal and sugar until smooth.

Beat in eggs, 1 at a time, beating until smooth after each addition. Stir in corn, ½ cup (250 mL) of the cheddar cheese, onions, jalapeno pepper, cilantro, salt and pepper.

Pour half of the egg mixture into greased 6-cup casserole. Cover with three-quarters of the sausage. Pour remaining egg mixture over top. Sprinkle with remaining sausage and cheddar cheese.

Bake in oven for about 20-30 minutes or until light golden and barely set. Serve immediately while centre is still slightly sloppy.

 
Marg, is this raw or sured sausage? not familiar with it? recipe sounds like a keeper, thanks

 
They are a PC product. Fully cooked and smokey pork sausage. Not as dry as chorizo

which I have also tried with this and found it too dry altogether.

The trick for us was to eat this right away while it was still a bit sloppy.

 
Thanks, will try to find it, Sysco has a huge variety of sausages. I make this sort of thing when we

are coming into port or leaving and everyone needs to eat at once. Sometimes I do a savory bread pudding, the grits and sausage bake that was posted a while back. Also for holidays I like to do Gretchen's shrimp and grits bake.
