RECIPE: Rec: Chipotle Sloppy Joes from Cooking Light. Low in fat and looks great!

RECIPE:
These do look nice. I've found as I have changed my eating habits, I tend to

like spicier foods now. The smokiness of chipotle is always good, and I hadn't thought of adding it to sloppy joes.

Thanks!

Lisa, one tip I've learned...

Once you open the can of chipotles, what to do with the rest? A chef taught me to puree them, then freeze in 1 tablespoon portions. Then I can add it to soups, sloppy joes, braises or whatever. I was so thrilled to learn this, and to be armed with an instant flavor booster in the freezer!

Thanks Traca, I've tried that a few times. I have lotsof little nuggets of "stuff" in my freezer,

herbs, chipotle, lemon juice, etc. I sometimes am lazy and don't label them, thinking I'll remember what they are.

Sometimes that is not a good strategy...LOL

Great idea! That would make a nice lunch, a container of the filling to warm in the micro, and make

a nice fresh sammy.

What? You're not into "freezer roulette"? Makes life exciting AND destroys your digestive system

in one "swell foop". I use half-size zip-locks bags with labels on them and keep a Sharpie handy for those impossible little portions, then toss 'em into the freezer, willy-nilly.

(Tell me you've never done the "lick" test to figure out if it's "very old meat or very new cheese." To quote Mr. Simon.)
