2/3 c Dutch-process or natural cocoa
1 ¾ c flour
1 ¼ c brown sugar
1 t baking powder
1 t baking soda
¾ t salt
1 c chocolate chips
2 eggs
1 c milk
2 t vanilla
2 t vinegar
½ c butter, melted
Preheat oven to 425F. In a bowl, whisk together cocoa, flour, sugar, baking powder, baking soda, salt, and chocolate chips. In a bowl, whisk together eggs, milk, vanilla, and vinegar. Add wet ingredients, along with melted butter to dry ingredients, stirring to blend. Scoop batter into 12 lightly greased muffin cups. Bake muffins for 20 minutes until tester inserted comes out clean.
