Chocolate Coconut Pecan Bars
1 c. all purpose flour
1/4 c. unsweetened cocoa powder
1/4 c. butter or magarine, room temperature
1/2 c. packed light brown sugar
1 large egg
1/2 tsp. vanilla
1 can (14 oz.) sweetened condensed milk
2 cups flaked coconut
1 c. coarsely chopped pecans
Heat oven to 350. Lightly grease 13x9 inch baking pan. Line with foil, grease again.Mix flour and cocoa till blended. In large bowl beat butter and sugar with mixer til fluffy. Beat in egg and vanilla. Stir in flour mixture until blended. Press mixture in bottom of pan. (If mixture is very soft chill until firm enough to press). Bake 10 minutes or until firm to touch. Cool completely on rack.
In a med. sized bowl mix condensed milk, coconut and pecans. Spread evenly over cooled crust. Return to oven and bake 25 minutes or until edges begin to brown and top si set. Cool in pan on rack. Cut into 24 bars.
Elaine's note - I used a tube of condensed sweetened milk so they were less like a bar cookie and more like a flat one but they were
very yummy. I found the recipe in an old magazine - woman's day and I am not going to tell you from when!
