Chocolate, Cranberry & Oat Bars
Not only do these chewy bars have a wonderful cranberry-orange flavor, theyre also a smart choice.
1 c dried cranberries
1/4 c orange juice
1-1/2 c flour
1-1/2 c quick-cooking oats
1 tsp baking powder
1/4 tsp salt
3/4 c (1-1/2 sticks) margarine, softened
1-1/2 c firmly packed brown sugar
2 eggs
4 squares Baker's Semi Sweet Baking chocolate, coarsely chpped
1/2 c. pecans
Preheat oven to 350
Combine cranberries & orange juice in a microwaveable bowl. Microwave on HIGH 30 sec. Let stand 10 mins.
Meanwhile, combine flour, oats, baking powder and salt, set aside.
Beat margarine and sugar in large bowl with an electric mixer on med. speed until light and fluffy.
add eggs, 1 at a time, beating until well blended after each addition.
Gradually add flour mixture, mixing well after ea. addition. Stir in cranberry mixture, chocolate and pecans.
Spread dough into a 13 x 9" baking pan, sprayed with cooking spray.
Bake 20-22 min. or until center is set. Cool completely on wire rack before cutting to serve
Makes 32 bars.
You can substitute raisins for the cranberries.
