Chocolate Mayonnaise Cake
Preheat oven to 325°. Grease and line two 8” layer pans with parchment. Grease and flour bottom of pan...do not grease sides.
In a mixer bowl, sift together until well blended:
2 c all purpose flour
2/3 c cocoa (not Dutch)
1 2/3 c sugar
1 1/4 t baking soda
1/4 t baking powder
Add 1/3 c room temperature water
3 large eggs
1 cup mayonnaise
1 tsp vanilla
Mix on low to combine, then mix at medium for two minutes
Stir in an additional 1 cup of room temperature water and 1 teaspoon vanilla.
Pour into pans and bake until a tester comes out clean.
*The only change I make, is to mix the wet ingredients for almost a minute then add dry ingredients. I've made this cake twice and wanted to post it here for safe keeping!
