not sure where i found this recipe, online or a magazine as i've got it scrawled on a scrap of paper, but these cookies are so simple and so good. they're cocoa-y, so not too sweet, you can just taste the salt, and they have a lovely sandy type texture. sandy in a good way. i'll add my tweaks at the end.
3/4 cup flour
1/4 cup cocoa
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, room temp
1/2 cup sugar
1/2 tsp vanilla
2 tbsp oats
1/4 cup semisweet chocolate chips
set oven to 350. sift first four ingredients into a bowl and set aside. beat butter until fluffy. add sugar and vanilla and blend. add flour mixture and beat till moist clumps form. mix in oats. mix/knead in chocolate chips. form into 1tbsp balls, place 2" apart and flatten slightly. bake 14 min, cool on sheet. makes 12.
my notes - i use seasalt, not sure if that's what gives part of the nice flavor? the better the cocoa, the better the cookies. for oats, i've used quick-cooking and wild oats, both are fine, i think i like the wild oats a bit better, and i tend to add closer to 3 tbsp. i used those dark hersheys chips this time, which were very nice, but i think i like these better without the chips. the dough will look like it won't come together, but it will. they're nice made tsp size and baked for 10 min, too.
