Cinnamon Roll Cookies

For the filling: (Combine and set aside)

Combine -

1/2 cup sugar

2 T. ground cinnamon

For the dough:

3 cups flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon table salt

2 sticks unsalted butter (1 cup)

1 cup brown sugar

2 eggs

1 teaspoon vanilla

Cream butter and sugar until smooth. Add eggs and vanilla. Mix until incorporated. Add the dry ingredients just blending till incorporated.

Pat the dough into a 16x9" rectangle using your hands onto a piece of parchment or wax paper.(I used parchment and rolled it up on the same piece)

Sprinkle half the cinnamon mixture over the dough.

Beginning on a long side, roll the dough into a log using the paper to help you. Dust the outside of the log with the remaining cinnamon-sugar. Wrap and chill for at least 3 hours.

Preheat oven to 350 - parchment lined baking sheets - Slice dough into 1/4" thick slices. Bake 10-12 minutes. Cool and drizzle with icing.

Recipe icing is

1 cup powdered sugar

1/4 cup warm water

1/2 teaspoon powdered egg whites

I used powdered sugar, cream and leftover coffee for my drizzle.

These were really easy and delicious.

 
Well, I made the cookies and loved the fact that they were a refrigerator cookie.

These come in very handy during the holiday. They are a good basic cinnamon cookie, nice texture, although I wouldn't label them "over the top", "fantastic" or "to die for" (after all, there is no chocolate involved *g*).

I frosted them but DH, DD and I all agreed it didn't add a thing to the cookies. The next batch I used gold sanding sugar on them and like them better. Plus, they are pretty.
