These cookies were good! They were nice and chewy right out of the oven. I kinda thought they'd be crunchy, because they were so thin. Maybe it'll change tomorrow...

Corn Flakes and Coconut Cookies

1 cup (7 oz) granulated sugar

1 1/2 cups (11 1/4 oz) brown sugar

1 1/4 cups (10 oz) butter

2 eggs

2 teaspoons vanilla

2 cups (9 oz) flour

2 teaspoons baking soda

1/8 teaspoon salt

2 cups (6 oz) oats

1 cup (3 oz) flaked coconut*

2 1/2 cups (2 1/2 oz) corn flakes

*I used dessicated (unsweetened) coconut

Preheat oven to 350º (I used 340º in convection mode).

In a medium bowl, sift together flour, baking soda and salt; set aside.

In a separate bowl, combine oats, coconut and corn flakes, and set aside.

Cream butter and both sugars in mixer until creamy. Add eggs and vanilla and beat well. Add flour mixture, and mix until just combined. Fold in oats mixture by hand, until just combined.

Scoop into 1” balls, and place 2” apart on greased cookie sheets (I used silpats).

Bake for 8-10 minutes, until golden brown.
