These sound delish. In my try file for now but a freind sent this to me and said it was a wow, with their Xmas ham dinner. Thought I'd share in case anyone is doing something this will go with for NYE.
Cornmeal Muffins with Apricots and Rosemary
2/3 cup yellow cornmeal
1-1/3 cups flour
1/3 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 cup dried apricots, chopped
1 T minced fresh rosemary
1 egg
1-1/4 cups buttermilk
3 T butter, melted
Heat oven to 400 degrees. In a large bowl, stir together the cornmeal, flour, sugar, baking powder and salt. Stir in the apricots and rosemary, and, if you like, 1/3 cup chopped dried cranberries (or you can garnish the tops of the muffins with the cranberries before baking)
In a small bowl, lightly beat the egg, then stir in the buttermilk and the melted butter. Make a well in the center of the dry ingredients; pour in the buttermilk mixture and stir until just combined. Put into lightly buttered 12-cup muffin tin. Top each muffin with a dried cranberry and/or a small sprig of rosemary, if desired. Bake muffins until lightly browned, 20 – 23 minutes. Remove from the oven; run a small spatula around the muffins to loosen and cool them on a wire rack.
