All this talk about lobsters being so affordable this summer, I haven't found that to be the case! So here is a good recipe that I subbed crab meat for lobster meat. Very tasty.
1/2 lb fresh mushrooms, about 16
2 T celery, finely chopped
1 T onion, finely chopped
1 T red bell pepper, finely chopped
1/4 lb crab claw meat
2 c oyster crackers crushed
1/4 cup cheddar cheese, shredded, separated
pinch garlic powder
1/4 t Old Bay Seasoning
1/4 t black pepper, freshly ground
pinch salt
1 egg
1/4 cup water
Preheat oven to 400 degrees.
Saute celery, onion, and pepper in butter for 2 minutes, transfer to a plate and cool in the refrigerator. While vegetables cool, clean mushrooms and remove stems. Set caps to the side and finely chop half of the stems.
Combine the sauteed vegetables, chopped mushroom stems, and all other ingredients (including only half of the cheese), and mix well. Place mushroom caps in individual buttered casseroles or baking dishes (about 5-6 caps each).
Spoon 1 teaspoon of stuffing into each mushroom and top with remaining cheese. Roast in oven for 12-15 minutes until cheese is lightly browned.
