This is what I came up with in trying to duplicate the jarred stuff sold at Whole Foods. This is very close but not exactly the same, delicious just the same!

I use it on the Stilton Cheese Tart at Epi, Whole foods sampled it on Stilton and water crackers and I put it on my roast chicken sandwich (along with some gouda, sauteed apples and greens on ciabbata--like the sandwich in the Whole Foods deli)

1 1/2 bags cranberries, pulsed in the food processor

2-4 red peppers depending on their heat and your desire for heat, add to cranberries and pulse again

Place in large jelly pan along with:

1/8 C cider vinegar

1 1/2 C water

Bring to boil and add 6 C sugar, simmer to consistency that you want (cranberries contain a lot of natural pectin so don't really need the addition of powdered pectin but feel free to add it if you want). Can.

This is super delicious--IMHO!

Barbara: I have a question about the red peppers...

I'm only familiar with jalapeno peppers so what type of peppers would these red ones be? (the only red peppers I've used have been red bell peppers smileys/smile.gif thanks! Ann

 
Hi Ann, I found some red jalapenos at Whole Foods. They appeared to be a bit different..

from the green ones there. They were more squat and fat than long and thin. So, I don't think they were green ones that turned red. I tasted one when I cut it open and it seemed quite mild so I left the seeds in and I think I used three. But, be careful, all peppers are different!
