I made this tonight and used up the rest of our leftover turkey. I also threw in some leftover green beans, boiled onions, and mashed potatoes for thickener. It was very tasty--real comfort food.
I think there's a mistake in the ingredients/instructions. It calls for 2 1/2 cuts of turkey broth, divided, but then in the directions says to add 2 cups broth and milk, then 3 cups broth. So it seems to call for 5 cups all together, but that wasn't clear to me. In any case, I just added broth until it looked right.
Serves 4 (I doubled it)
Ingredients
1/8 cup butter
1/2 cup chopped green onions
1 cup frozen sliced carrots, thawed and drained (I used fresh and more than called for)
1/8 cup flour
2 1/2 cups turkey broth, divided (I used chicken broth)
1 cup mile or 1 cup cream
1 tsp salt
1/2 tsp pepper
1/16 tsp cayenne pepper (I skipped this; didn't feel like digging it out)
1/2 tsp dried parsley
1 1/2 cups chopped cooked turkey
4 ounces noodles (fusilli, rotini or similar--I skipped this)
Directions
1. Saute onions and carrots in butter until soft, not brown.
2. Add flour and mix well.
3. Gradually add 2 cups broth and milk.
4. Cook and stir until it thickens.
5. Stir in remaining 3 cups of broth and all remaining ingredients
6. Simmer 10-12 minutes until noodles are tender, stirring occasionally.
