Crockpot Eggplant and Tomato Stew with Garbanzo Beans

1 medium eggplant, peeled, cut in 1/2" cubes

2 cups chopped tomato

1 1/2 cups sliced carrot

15 ounces garbanzo beans, canned, drained

8 ounces red kidney beans, canned, rinsed and drained

1 cup chopped onion

1 cup sliced celery

3 cloves garlic, minced

3 cups vegetable broth

6 ounces tomato paste

1/2 teaspoon dried oregano, crushed

1/2 teaspoon dried basil, crushed

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon crushed red pepper

1 bay leaf

In a 3 1/2, 4 or 5 quart crockpot, combine eggplant, tomatoes, carrots, garbanzo beans, kidney beans, onion, celery and garlic.

Combine vegetable broth, tomato paste, oregano, basil, salt, pepper, crushed red pepper and bay leaf. Pour over vegetables.

Cover; cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3 1/2 to 4 hours. Discard bay leaf.

Makes 6 servings.

yum. this will be my pantry cleaning recipe today. Just need the eggplant. I think I'll throw

in a partial bag of shell macaroni too. I have some homemade chicken stock in the fridge to use up too. Thanks Marsha.

 
ok, I bought my eggplant, but clerk had to ask me what it was and what did it taste like. sigh.

how does one explain the taste of eggplant? I was befuddled(is that a word?)

 
Quite often clerks ask me what something is...even purple cabbage!!! I'm always telling someone in

line, or a clerk how to makg something good with butternut squash, acorn squash, purple cabbage, eggplant, zucchini, rutabagas

Befuddled is a word (at least I've used it too smileys/smile.gif)

 
We had some friends over (not foodies) for eggplant parm. She asked for the recipe. I called her a

few days ago and asked how her eggplant turned out. She said she had to throw the eggplant out because when she cut it open there were alot of dead black bugs in the center of it!

I told her they were seeds.

 
Lol, that's a good one. I also get a lot of questions (or odd looks) from cashiers. A time or two,

I've gotten home and found I was charged for a different item that what I bought, such as red cabbage instead of raddicchio or cilantro instead of watercress.
