Salt

Seasoned Rice Vinegar

Fresh herbs (optional)

Sour cream (optional)

Peal or score cucumber skins if desired. Slice cucumbers thinly. Put a layer of slices in a glass or ceramic bowl and sprinkle generously with salt. Repeat layers of cucumber slices, salting each layer. Cover and refrigerate two hours or overnight. This will remove some of the excess water.

Rinse cucumber slices well by swishing them under running water in a colander. Drain well, then dump slices onto a dish towel and pat dry.

Return cucumber to bowl and cover with seasoned rice vinegar. Cover and refrigerate two hours or overnight.

Drain and add herbs and sour cream just before serving. For your Japanese meal, I'd omit the herbs and sour cream.

 
You can add sliced daikon to this & a bit of fresh grated ginger.

Or even a tiny bit of shredded crab meat (real or imitation)
