Curried Apple-Walnut Salad

Makes 12 servings

Ingredients:

2 medium red delicious apples

1 medium Granny Smith apple

1/3 cup plus 2 teaspoons lemon juice

2 cups diced celery with leaves

2 tablespoons chopped walnuts

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon curry powder

1/4 cup water

1 tablespoon vegetable oil

1 head Boston Bibb lettuce leaves

Preparation:

Core, halve and cut each apple into 24 slices. Do not peel. Combine apples and 1/3 cup lemon juice in a bowl, toss well. Cover and chill.

Combine remaining lemon juice, celery, walnuts, salt, pepper, curry powder, water and oil in a bowl, stir well. Cover and chill.

To serve:

Line a large serving platter with lettuce, drain apples and arrange in individual servings on top of lettuce. Spoon celery mixture around apples.

Michael, I made this curried apple salad for dinner tonight. >>

I won't make it again....but that's me.

First, I didn't have the apples they called for, I used gala. I love apples, I love curry but I've always had curry in hot food (warm heated, not necessarily spicy heat) and loved it.

But I took one bite the apple, between the lemon and MILD curry I have, it kind of puckered my cheek and I just didn't like the curry with the cold apple.

My husband ended up eating his salad and said it was mild, he wasn't tasting much. But he can eat really HOT stuff.

I ended up adding raisins, dates and mayo to mine before I could eat it! Then I had visions of blending the curry into the mayo, then maybe.....

At least with the additions I put in my salad I didn't taste curry much.

So, I definitely won't make this salad again.

You may like it better. I suspect it depends on the apples, the type curry and the person's taste.
