Haven't made these yet - but they sound so good.

Curried Pumpkin Seeds

Makes about 2.5 cups

Nonstick veg. oil spray

1 large egg white

1 T. fresh lime juice

1 tsp. olive oil

2 T. sugar

1 T. curry powder

1.5 tsp. coarse kosher salt

1/8 tsp. cayenne pepper

12 oz. hulled pumpkin seeds (about 2.5 cups)

Preheat oven to 350F. Line large rimmed baking sheet with parchment; spray with nonstick spray. Whisk egg white, lime juice, and oil in large bowl. Add next 4 ingredients; whisk. Add pumpkin seeds; toss. Transfer to baking sheet, spreading evenly. Bake until toasted and fragrant, stirring often, about 24 minutes. Cool on sheet.

These sound great Deb. Here in the southwest, roasted and flavored pumpkin seeds...

...are a popular snack. The mexicans call them "pepitas". I love them just pan-roasted and salted. They go from a somewhat flat seed to a plump, crunchy treat when roasted. Good stuff!

Trader Joe's carries raw, unsalted pumpkin seeds, so I will definitely try this.
