The batter looked weird and soupy anyway with only 1 1/2 cup flour to 1 cup of hot coffee. I'll bet it turns out heavy and fudgy.

Any other guesses.

I think the recipe looks so good and 28 folks at allrecipes.com loved it.

Coffee Date Bread

Yields: 8 servings

"A dark, wonderfully moist bread. I serve at every holiday meal and then enjoy the leftovers at breakfast."

INGREDIENTS:

1 cup chopped pitted dates

1 teaspoon baking soda

1 cup strong brewed coffee

2 tablespoons butter, softened

1 cup white sugar

1 egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon salt

1 cup chopped pecans

DIRECTIONS:

1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan, and line the bottom of the pan with parchment paper.

2. Place the dates in a small bowl, and sprinkle the baking soda over. Heat coffee to boiling, and pour over the dates and soda. Set aside.

3. In a medium bowl, mix together the butter, sugar and egg until well blended. Stir in vanilla. Blend in the flour and salt, then fold in the pecans and date mixture. Transfer the batter to the prepared loaf pan.

4. Bake for 1 hour in the preheated oven, or until the top of the loaf springs back when lightly touched. Let stand for 5 minutes before removing from pan. Peel off paper, and allow to cool on a wire rack.

 
It turned out perfect! I thought it wasn't sweet enough but husband ...

It turned out perfect! I thought it wasn't sweet enough but husband disagreed. I would add another 1/4 cup of sugar next time. I really reccomend this recipe. I also would brew stronger coffee next time, I couldn't really taste it. Or maybe add a tablespoon of instant espresso to the cup of coffee.

I sprinkled the top with sugar before putting it in the oven and this was a great addition, gave it a nice crispy top.

Make this recipe! Very quick and easy.

Did you taste it warm or cold? . . .

Warm will be less sweet than cold. If you tasted it warm, taste it now when cold (if there is any left!) and you should notice a difference.

Ah ha, you got it, I tried it warm right out of the oven. I bet that's why it didn't taste as sweet to me.

I would try it again but I've cut sugar and flour out of my diet. (not to be gross but I spat out the bit I tried yesterday) Husbands stays tall and lanky no matter what he eats. He had it for breakfast and said it should go into regular rotation in my T&T recipes for him.
