First let me say that I have been searching for a GREAT orange sauce for years and haven't found one that hit the spot until this one. The basic recipe if from Cooking Light for Duck A L'Orange (link to this recipe listed below) but I changed it a bit as follows:

3/4 cup fresh orange juice

3/4 cup unsalted chicken stock

1-2 tablespoons lemon juice

1/4 cup sugar

3 tablespoons water

1 tablespoon grated orange rind

Hot pepper flakes (optional)

2. Combine juice and in a medium bowl. Combine sugar and water in a medium saucepan over medium-high heat. Bring to a boil, stirring until sugar dissolves; cook, without stirring, until liquid turns a golden amber color (about 5 minutes). Carefully stir in juice mixture (the liquid will boil rapidly); stir until hardened sugar dissolves. Bring to a boil; cook until reduced to 3/4 cup (about 10 minutes). Taste and then add lemon juice to taste (sauce will be too sweet without it – something magic happens when added:) Remove from heat; stir in rind and hot pepper flakes if using

Sounds great! I would use it for duck breasts. I've despaired of cooking a whole duck

at least an American one, where the legs and breast are done at the same time. This would be wonderful with either the sautéed breasts or the roasted legs.
