First let me say that I have been searching for a GREAT orange sauce for years and haven't found one that hit the spot until this one. The basic recipe if from Cooking Light for Duck A L'Orange (link to this recipe listed below) but I changed it a bit as follows:
3/4 cup fresh orange juice
3/4 cup unsalted chicken stock
1-2 tablespoons lemon juice
1/4 cup sugar
3 tablespoons water
1 tablespoon grated orange rind
Hot pepper flakes (optional)
2. Combine juice and in a medium bowl. Combine sugar and water in a medium saucepan over medium-high heat. Bring to a boil, stirring until sugar dissolves; cook, without stirring, until liquid turns a golden amber color (about 5 minutes). Carefully stir in juice mixture (the liquid will boil rapidly); stir until hardened sugar dissolves. Bring to a boil; cook until reduced to 3/4 cup (about 10 minutes). Taste and then add lemon juice to taste (sauce will be too sweet without it – something magic happens when added Remove from heat; stir in rind and hot pepper flakes if using
