(to go with chicken dish below ot chicken state, or really any Thai or hot/spicey food that you want to add a sweet-hot taste to)
4 Tbsp rice vinegar
1 tsp sugar
1/2 cucumber, coarsely chopped
2 shallots, chopped
2-3+ chile peppers, thinly sliced
Combine the ingredients, and refrigerate overnight. Serve cold.
