Two observations on the avocado thing...

in this recipe, very popular with Paleo-athletes, the best way to enjoy it is - bake it and cool it. Eat it cold instead of warm.

Even fridge-cold, if you prefer

Now, as to warm avocado - try this: slice the avocado into thick slices, drizzle a little olive oil, salt and pepper and quickly grill it

or use a grill pan on a stove

Cooked avocado is awful, and the color changes too. Cook the egg, then put on avocado.

I like it better that way. If the avocado is room temp, the hot egg warms it anyway.

I often use browned butter to spread on toast. Then smash an avocado onto the warm toast, sprinkle with flaked salt......delicious. Add a little Piment de Espelette to the smashed avocado too for an extra kick!

 
My new thai restaurant adds avocado to their beef massaman. I was surprised how nice it tastes.

it is not really "cooked" per se, just added at the end to the stew. So, it does get warm, but not really mushy. I have enjoyed it. It was a "new to me" texture / taste.

 
not exactly cooked but gets plenty warm in chicken tortilla soup which is yum

The baked egg and avo looks good to me. love avocado toast, too! If you brush olive oil on the cut

side of the avos before baking they probably won't discolor.

 
I'm with Sally on this one - try it!

I never thought I would like warm avocados but now it's my favorite way to eat them. I also half them and grill them with the skin still on. Then I throw them in a ziplock bag in the fridge and they hold without oxidizing so they are perfect to throw in for lunch salads and such even if you eat it cold. But warmed they are to die for. It's a completely different taste.

 
I've had them several times hot and you're right, completely different taste

I like the idea of them grilled. I've had them several times as a dessert, which in other countries

is the preferred way to eat them. My friend Maria is a cooking instructor from Portugal and said she never saw a savory application for avocados until she moved to the United States! I've made the avocado ice cream in David Leibovitz's book and an avocado mousse recipe I got from a Mexican chef. Both were terrific.

I also recently read that there are health properties in avocados that make you happy. I eat them weekly now. Usually with just salt and a spoon. smileys/smile.gif

I've had deep fried avo chips and they're awesome!

frozen sticks, coated in tempura batter, and deep fried...

try it. really!
