I'm not sure how authentic this is, but the tastes seem to go together very well. I made it for a light dinner tonight.
1 lb turkey tenders, sliced chicken breast, or lamb
olive oil
1 cup edamame, butter beans, pr garbanzo beans, cooked
1 cup cherry or grape tomatoes, cut in half
3-4 cups chicken stock
4 bay leaves
1 t onion powder
1 T corriander
2 t cardamom
2 cloves garlic, chopped
1 stalk green onion (about 1/4 cup), chopped
handful baby carrots
1/4 cup sliced green olives
3 T lemon juice
salt and pepper to taste
rice or couscous
sweet potatoes
Greek yogurt
Brown turkey (chicken, or lamb) in pan with a little olive oil, or use leftovers. Assemble other ingredients except for rice, sweet potatoes, and yogurt in a large pot and when meat is done, add to the pot. Simmer over medium-low heat for about 2 hours or until meat and carrots are done.
Roast sweet potatoes and boil or steam rice.
Ladle over rice, topped with a heaping tablespoon of yogurt, with a side of roasted sweet potatoes.
