I used this recipe from my LDP stack for skirt steak last night and saved a quarter of a cup for a skillet of onions and peppers as noted. Very yummy. My only tweaks were more garlic, subbing chipotle for the cayenne, and omitting the salt until after the almost 12 hour marinating period.
Fajita Marinade
Great on beef or chicken. This makes enough for two pounds. I've tried a bunch, but this is terrific.
1/2 cup olive or salad oil
1/4 cup lime juice
2 crushed cloves garlic
1 tsp paprika
1/4 tsp cayenne
1/4 tsp soy sauce
1/2 tsp worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
Mix all together and marinate a few hours to overnight. I like to save a few tablespoons of the seasoned oil from the leftover marinade to saute a skillet full of peppers and onions.
