Fennel with Special Dressing

2 bunches fennel, trimmed

1 c olive oil

1 clove garlic, finely chopped

1/4 c vinegar

4 tbsp parmesan cheese, grated

1 tbsp oregano

3 sprigs fresh parsley, finely choped

juice of 2-1/2 lemons

salt and pepper to taste

Wash and clean the fennel; cut ea. stalk lengthwise into 6 sections. To make dressing, blend together all ingredients except fennel. Serve the dressing with the fennel

Serves 6

Marsha, I'm growin' fennel too, and all the recipes I have so far>>>

have me braising it until very tender. Nice, but I like this opposite approach. Thanks!

 
Long Beach. (South of L.A.) The non-bulb type grows wild here, so I hope that's a good sign.

 
I have one that's already a foot tall and forming a little bulb, the rest range from a few inches

to about 8" I don't know what I did right with the one--my soil was really bad to start with and I'm getting uneven results.

I just thinned the row and I transplanted the thinnings here and there and they're sulking, looking back up at me and saying, "Live here? You gotta be kidding." There's rain on the way so maybe they'll perk up and lose the attitude.
