OMG - we're snowed in and I have most of the ingredients - stopped to get dill for something else
and I'll have more than I need for the peasant soup so guess what I am making? I have a pint of kalamata olives that have been sitting there waiting for something good. I don't have scallions but I have shallots. Might try somewith capers too. I bet this would be good tossed with pasta with or without some shrimp.
Just made it & can't stop eating it while making the crostini - KEEPER!!!
I had dill but not scallions so I sub'd shallots. Definitely on my keeper list. I think I'll have to start keeping a batch of this around since it has two of my favorite things - olives and feta. I also used an assortment of olives I had in the fridge.
Eating what's left for breakfast! Pita sounds great but all I had was bread
so crostini it was this time. And the only crackers I had were saltines so.... I am in love with this stuff. May have to make some to take to the cef's meeting Monday night.
