I never quite know what to do with leftover fried fish because it usually gets overcooked if you put it in the oven - coating all greasy and tough and/or soggy. And microwaving it is only worse.
So I experimented and came up with this great new staple I will make again. Thought I'd pass it along here.
3/4 lb (or so?) fried fish fillets, any type
1/4 cup seasoned bread crumbs
1 Tbsp tartar sauce
1 tsp lemon or lime juice (I used lime)
1/2 tsp celery seed
1 egg, beaten
freshly ground black pepper to taste
salt to taste
Mash fish pieces and then add other ingredients. I removed most of the coating from the fish, but I guess you don't eally need to, as long as it gets mashed finely with the fish. Combine until well-mixed.
Form patties and fry over medium heat in a little olive oil until done, about 15 minutes, turning halfway through cooking. Serve with a mixture of cocktail sauce and mayonnaise and fresh parsley as a garnish.
