Cheesecake Petit Fours
2.25 c graham cracker crumbs
3 Tbs sugar
5 Tbs(or more as needed, sometimes I use 6) melted butter
Mix together, pat on bottom of 10 by 15 roll pan. Bake 5 minutes 350 (or 325) amd watch! Cool on rack.
3 large (8 oz) packages cream cheese
1/2 cup plus 1Tbs sugar
1 Tbs lemon juice
1.5 tsp fresh grated lemon zest
Mix together, add 4 eggs, one at a time and 1.5 cups sour cream. Pour onto crust. Bake 350 for 20 minutes. Cool on rack. Cover w/ plastic wrap and cool 3 hours up to 2 days. Cut into squares of desired size, wiping blade of knife after each cut. Garnish top of each with a spoonful of apricot jam ( softened slightly to pourable consistency, but not warm)and top the jam w/ lightly toasted sliced almonds. Or top with fanned out sliced strawberries (vertical slices) or quarter slices of kiwi.
Makes 24 dessert-sized servings 2 by 2.5 or 5 dozen 1.5 inch squares for bite-sized servings.
