I've been reluctant to make another 'red' curd as I had such a disaster with pomegranate curd!!!
It ended up looking just like country gravy. With guests imminent, we just dumped in a lot of red food coloring to try and hide the brown-gravy look. It never got red like this beautiful raspberry curd, but it DID taste great. Never figured out why it turned that color - must have had some reaction between the egg yolks and pomegranate juice!
