1 pork tenderloin, butterflied

1 bratwurst, chopped finely

1/2 cup finely chopped leek

1/4 cup minced parsley

3/4 cup good fruit preserves

1/4 cup bitter orange juice (fresh would do fine)

pile bratwurst, leeks and parsley on the pork.

mix preserves and juice well.

cook pork on grill or in oven, basting with the juices (it wont take long).

serve over a bed of steamed rice.
