Fruited Chicken from Gourmet Gallery Cookbook
2-1/2 to 3# chicken pieces
1/4 c butter
1 tbsp cornstarch
1 tsp dry mustard
1/8 tsp ground ginger
1/8 tsp cinnamon
1/2 tsp salt
1 6oz can frozen orange juice
1 c red currant jelly
dash of tabasco
1 1# 3oz can sliced peaches
1 8-3/4 oz can mandarin oranges
1 8-1/4 oz can pineapple tidbits
1 16oz can dark cherries
slivered almonds
place chicken in greased baking dish. Melt butter and brush on chicken, bake at 350 for 1 hour, basting every 10-15 minutes.
Drain peaches, save one cup of syrup. If more juice is needed add syrup from pineapple. Combine cornstarch, mustard, ginger, cinnamon and salt in a saucepan. Add syrup, a little at a time,heat over low heat. Blend in orange juice, jelly and Tabasco, cook, stirring constantly until thickened.
Spoon off all but about 2 tbsp of chicken drippings. Pour 1/2 above mixture over chicken, bake at 375, 15 minutes. Remove from oven, top with peaches, oranges, pineapple and cherries. Add remaining syrup mixture, bake 15 minutes at 375.
Before serving, sprinkle with slivered almonds, plain or toasted, over top.
