1 lb. of boneless skinless chicken breast sliced thin

2 green bell peppers 1" dice

1/2 large vadalia onion 1" dice

5 Roma tomatoes 1" dice

10-12 basil leaves coarsly chopped

6 garlic cloves minced

1 bunch parsley chopped

1/2 - 1 tsp red pepper flakes

3/4 cup chicken broth

3 tbsp. olive oil

1 lb. rigatoni

Locatelli Cheese

Saute chicken in olive oil over med high heat 10 mins stirring often. Add minced garlic and red pepper flakes. Saute 1 min. Add vegetables and basil. Saute till crisp/tender. Add chicken broth and simmer about 10 minutes. Mix parsley into cooked rigatoni, place in serving dish. Shread some locatelli over rigatoni. Pour chicken mixture over top. Serve with locatelli and a good Italian or French bread.

...goes together fairly quickly and my boys love it.

I used to use a Muffaletta olive relish from Trader Joe's as the base for the sauce. My family loved it, but unfortunately for us, Trader Joe's discoed the stuff.
