This is so addictive. It is served very cold.

Gazpacho

1 qt. Clamato Juice

1/2 cup peeled and chunked cucumber

1/3 cup thinly, sliced green onions

1 T. EVOO

2 T. red wine vinegar

1 T. sugar

1 T. chopped fresh dill

1 - 3 finely diced fresh garlic cloves

1 avocado, chunked

1/2 tsp. Tabasco Sauce

1/4 to 1/2 lb. small, cooked shrimp

SALT and pepper

chill for one day

Add 1 cup tomato juice

Options: chopped jalapeño, celery, red bell, lime juice

My note: I added fresh lime juice and Tabasco Chipotle Sauce.

 
This sounds delicious Karen, it is in my to try pile. I love cold soups,

my family is so-so, but I think my husband would love this one. He loves Clamato juice. I may have to put a shot of vodka in his, as he uses Clamato for Bloody Marys. smileys/smile.gif

Karen, does the avocado still have its integrity the next day? I would think it would get brown or

mushy. I love Gazpacho and look forward to making this during the summer.

Barb, the avocado holds up because it has lime and the acid from the tomato juice.

I had some for lunch yesterday and it was fresh as when I cut it. I just checked it again before this posting and it is fresh and green. Amazing, yes?
It is very addictive and I crave it on hot summer days. We like to serve quesadillas with it. I often use Havarti cheese, chopped cilantro and a good salsa sprinkled over. Brown it up nicely in a non-stick pan until the cheese melts...heaven!
