I got this very interesting recipe off a German food board.
BANANENMARMELADE
1 kg Bananen (2.25 lbs.)
3 unsprayed limes or lemons
1 kg gelling sugar
1/2 Tsp. each cinnamon and ground cloves
4/10 l Rum (13 oz.)
4/10 l Eierlikör (egg liqueur--a recipe follows)
Slice bananas. Zest limes or lemons and juice. Toss to combine the bananas with the juice, zest, sugar, and spices in a large pan. Bring to a simmer and cook for 4 minutes, stirring continuously. Remove from heat and stir in rum and egg liqueur. Spoon the hot marmalade into jelly glasses and cap.
Homemade Egg Liqueur
10 Egg yolks
500g Powdered zucker
2P Vanille sugar (or sub. 2 tsp. vanilla extract)
1/4 l. cream
1/2 l. cognac or rum
Beat yolks and sugars until light and foamy. Stir in the cream, then the cognac. Bottle.
