Gelato di Limone

3/4 cup water

peel of 2 lemons, (be careful not to get any of

the white pith) about 1/4 cup tightly packed.

1/2 cup granulated sugar

1/3 cup freshly squeezed lemon juice

1/3 cup heavy cream

1. put water, peel, sugar and juice in a small

saucepan and bring to a boil. boil for 2 minutes

then strain the syrup into a bowl and let it cool. (I recommend refrigerating)

2. put in ice cream maker, stir in heavy cream and freeze according to instructions.

note: use pasteurized cream only. do not use "Ultra Pasteurized. also, you would probably want to triple this recipe.
