I have one friend who is allergic to gluten. Another is on a sugar free diet. The third is lactose intolerant. Put these three in a room and me in charge of the cooking and you have me frantically searching the internet for recipes for days.
Luckily, I found this recipe and avoided getting a stroke from all the stress.
To be honest, they did come out a tiny bit rubbery-ish, but they looked good and they tasted wonderful and everyone loved them.
I did question the cinnamon in there, as blueberries and cinnamon is not one of the classic combinations. At least not over here. I thought the cinnamon would overpower the blueberries, but it didn't. I think the cinnamon is in there because of the powdered stevia, which do have a little after taste. The cinnamon takes the edge off the stevia and makes them sweet without the after taste.
The recipe says:
Ingredients
1 cup gluten free rolled oats ( I used Bob’s Red Mill)
1 cup gluten free flour ( I used King Arthur’s)
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon gluten free baking powder
1 teaspoon gluten free baking soda
1 tablespoon powdered stevia
2 eggs*
1 cup unsweetened applesauce
1/4 cup butter, melted
3/4 cup milk (I used 1 %)***
1 teaspoon gluten free vanilla extract
1 cup frozen or fresh blueberries ( I used frozen)
optional: chopped nuts
Directions
Preheat oven to 400 degrees. In a bowl stir together the oats, flour, cinnamon, salt, baking soda and powder, stevia. Pour in the eggs, applesauce, butter, milk, and vanilla. Stir well. Gently mix in the blueberries. Evenly pour the batter into silicone cupcake liners or regular liners but you may need to spray them with cooking spray first. Add some chopped nuts if desired. Bake for 25 minutes or until a toothpick in center comes out clean. Mine were perfect at 25 min.***
* I used an No Egg egg-replacer, and it worked great!
** I used unsweetened soy milk, and that worked too.
*** I baked mine a little closer to 30-35 minutes because I used an old oven. Use a stick and check when they are done as an old oven will give you a longer baking time.
(And I did not use nuts. Just FYI)
