Goat Cheese & Basil Quiche

4 eggs

1/2 cup heavy cream or milk

1/4 tsp white pepper

12 ozs fresh goat cheese (Cherve)

1/4 - 1/2 cup freshly shredded basil or 3 tbls dried

Pre-heat oven to 375

With an electric beater or in a food processor,

beat all the ingredients until smooth and creamy.

Pour into pie shell or buttered glass or ceramic

pie plate and bake for 45 minutes to one hour.

The quiche should be puffy and browned. Let

cool for 10 minutes before cutting.

Note: I will sometimes add 1/4 cup grated

Parmesan to the mixture or grate in 1/4 to 1/2 cup of any leftover cheese in the frig. You might want to try herbed goat cheese instead of the plain.
