I cheated with wonton wrapper from the super mkt. there is a little asian shop here and they have better wrappers. I only used chopped chives in the filling and added some fresh ground pepper to the filling. these just melt in your mouth and were awesome!
I was tired yesterday, still am, and instead of using the sauce recipe I just took the roasted peppers with garlic and anchovies I had in the fridg and threw them in the blender. the result was perfect, both taste and texture wise. (I posted a similar recipe for pureed peppers some time ago.) I did forget the pine nuts but we didn't care. there were no left overs.
oh, tossing them in the pan with the browned butter wasn't all that succesfull and had to toss sauce in on top.
I'm going to tweak them a bit later in the week and use ricotta instead of the marscapone, a bit less goat cheese and more parm to make them just a bit less melting.
they would also work with any, good red sauce and even a spicey one. they are a keeper!
