I am working on compliling all my old recipes into a cookbook and ran across this one. I haven't made it in a while but I used to make it so much I think I wore it out. I saw the Gatlin Brothers making it on a show one time, probably Florence Henderson's cooking show on CMT
CHICKEN FIESTA GATLIN
I saw the Gatlin brothers make this on a television show one day and immediately tried it.
1 cup cheese cracker crumbs (Nips or such)
1 (1 1/4 oz.) pkg. Ortega taco seasoning mix
8 boneless, skinless chicken breasts
4 green onions, chopped
2 Tbs oil
2 cup whipping cream or heavy cream
8 oz Monterey Jack cheese, shredded
1 can green chilies, drained (peppers)
Mix crumbs and taco seasoning together. Coat chicken and place in large pan. Chop onions and saute in oil. Grate cheese. Mix onions, heavy cream, cheese and chilies. Pour mixture over chicken. Bake at 300 degrees for 2 hours.
