RECIPE: REC: Gorp Cookies....these have risen to the very top of my cookie list!

Since oatmeal cookies are my personal all time favorite cookies, no doubt that I would just love these cookies. Soft and warm right out of the oven or crispy, chewy the next day. This recipe makes a very generous sized cookie but I still recommend doubling it!

Gorp Cookies

Tate's Bake Shop

1/2 C flour

3/4 t salt

1/2 t baking soda

1/2 C butter, softened to room temp

1/2 C firmly packed dark or light brown sugar

1/4 C sugar

1 large egg

1 t vanilla

1 t water

1 1/2C rolled oats

1 C semisweet chocolate chips

1/2 C roasted peanuts

1/2 C raisins

Preheat oven to 350°F. Grease cookie sheets or line them with Silpats.

In a small bowl, mix flour, salt and baking soda.

In a large mixing bowl, cream the butter and sugars. Beat in the egg.

Add the vanilla and water. Mix together until they are just combined.

Add the flour mixture and the oatmeal. Mix them until they are combined.

Add the chocolate chips, peanuts and raisins. Mix them until they are combined.

Drop 1/4 C of the cookies, 3" apart, onto prepared cookie sheets. Press the cookies down lightly.

Bake for 15-17 minutes. Remove cookies from sheets and cool on a wire rack.

 
Barbara...are the peanuts salted or not? These sound wonderful..

and I think I'll make them on Sunday to spring on my coworkers on Monday. They're always my "testing ground".

 
Hi kpinky, I used the roasted, unsalted from Trader Joes and they were

just delicious. I also used a scant cup of the chips and put in a generous amount of the peanuts and raisins--just personal preference.

My co-workers are always my testing ground too! They just love it and can't wait to get into whatever I bring in. One day I left a dish of goodies in my office all covered, instead of putting it in the kitchen as usual. Someone spied it and sheepishly asked if he could put it out!!!

 
I heart Oatmeal cookies......

These sound soo yummy. I made oatmeal cookies last month but bought quick cooking oats. Yuck. You really don't get the same oaty texture.

I just added the ingrediants to my shopping list.

FoodMuse, you are right the quick oats have a different texture than the "old fashioned" ones....

I keep a big Quaker box of each of them in my pantry so I can mix or choose the texture I want depending on what I am making.

Hope you enjoy them as much as we did! DH picked thru the cookie bowl and ate all of these first.....

 
Toasted oatmeal

I totally agree on using regulat oatmeal, now toast it is the oven at 350F degrees for about 15-20 minutes, spread out on a rimmed baking pan, stir once or twice, store in an airtight container or back into oatmeal container.
Or Trader Joe's (TJ's) sell toasted oatmeal.
Oatmeal cookies are my DH's very favorite, especially the ones his gram made...so I have a large collection of recipes trying to find the perfect Gram Sara made.
Another tip - reconstitute the raisins and double up on chopped walnuts.

I soak the raisins, or dried cranberries in warm water for about 15 minutes, then drain and dry them before using in recipes. It makes a big difference in cookies. I also do this before adding the dried cranberries to green salads or granola. The soaking plumps them up and gives them more flavor.

I like your idea for toasting the oatmeal--big oatmeal cookie fans in my house, so I'll have to try your technique!

 
Reconstitute raisins or other dried fruits

In a small microwave-safe bowl combine dried fruits/raisins with liquid to barely cover; cover with plastic wrap and MW on High for 45-60 seconds, set aside until cool enough to handle and proceed with recipe...I have the MW from hell, with 1400 Watts, talk about too much power.
