Grapefruit Alaska from Gourmet Gallery & Fla. Citrus Commission
2 grapefruit
brown sugar or Kirsch to taste
3 egg whites
9 tbsp sugar
1/2 tsp vanilla
1 pint orange sherbert of 1 pint vanilla ice cream
Halve grapefruit, remove sections. Cut away all membrane. Place fruit in bowl, sprinkle with brown sugar or Kirsch to taste. Chill rinds and fruit.
Beat egg whites until frothy, add sugar gradually and beat until stiff. Drain grapefruit. Put 1/4 c. sherbert in bottom of grapefruit shell, top with 1/4 cup sherbert. Spread meringue over top to seal. Place on cookie sheet and broil until meringue is lightly browned. Serve at once.
What a wonderful way to end a dinner party. It is a beautiful dessert.
