I had a quarter pork loin. Saturday morning I cut twice to butterfly, then rubbed all over with a couple of cloves crushed garlic, then heavily sprinkled Penzey's Bavarian Seasoning over it. I rolled it back up and wrapped it and marinated until last night. Right before popping in oven I unrolled again to salt, then rolled back up and roasted. REALLY good.
