Serves 4
4 pork loin chops, 1/2" thick (about 1 pound)
2 tablespoons honey
1 tsp dried oregano
1 teaspoon grated lemon peel
3 tablespoons lemon juice
3 tablespoons olive oil
Salt and black pepper to taste
Set oven to broil. Place pork on rack in broiler pan. Mix honey with the oregano. Mix remaining ingredients. Brush honey mixture evenly on top of pork chops (both sides). Broil with tops 4 to 6 inches from heat 7 to 8 minutes turning once and brushing with the honey mixture, until slightly pink when cut near the bone. Discard any remaining honey.
Serve with salad using fresh spinach, artichoke hearts, tomatoes Kalamata olives and extra virgin olive oil.
