the recipe as I made it.
GREEN BEAN PATTIES
1 lb. green beans, cooked, chopped
2 eggs, beaten
1 med. onion, chopped fine
1/2 cup plain bread crumbs
salt, pepper and garlic powder
to taste.
Panko bread crumbs.
Line a cookie sheet with foil and spray with Pam. Mix all ingredients together and form into patties. (I made 12 patties, using about 1/4 cup of mixture) If necessary, add more bread crumbs to make sure they bind together.
Beat 2 more eggs with a little water in a bowl.
Dust patties with flour. Dip into beaten egg, then into Panko crumbs. Place on prepared cookie sheet and spray with Pam. Bake 375º for 20-25 minutes, till lightly browned.
NOTE: My neighbor said she uses Matzo meal instead of crumbs and then frys them in some oil.
I wanted to make them a little more diet friendly
so that is why I baked them and used plain bread crumbs instead. The next time I will try them with Progresso italian flavored bread crumbs.
43 calories per pattie. 1 WW point.
My DS stopped by and ate 4 patties. He thought they were delicious. (So did my DH and I)
