This was yummy with a nice tart lemon flavor.
I bought good chicken breasts on sale for $1.99/lb. at one of my favorite supermarkets, Sweetbay.
I made the sauce recipe substituting 1/2 tsp of dried rosemary in lieu of 2 tsps of fresh. I also used my all-time favorite Hellman's mayo – none other! I added an additional garlic clove as per reviewers' suggestions.
I trimmed the large chicken breasts (about 3 lbs.) and rolled-out between plastic wrap to even them out. No way was I going to flatten them to 1/2”! I have a great Breville indoor electric grill that can handle thick cuts of meat.
Decided to insert slits on both sides of the flattened chicken breasts à la Indian style for marination overnight. I squished about 2/3 cup of the marinade into the chicken breasts with me rubber gloves (yes, I'm a woosie when it comes to handling raw poultry/marinades). Having made Indian-type yogurt marinades such as tandoori chicken and chicken tikka masala, it made sense to me to do what I did to increase the flavor and tenderness of the chicken by marinating overnight. Having tasted the marinade, I'm sure that you could substitute a good yogurt for the mayo.
